When in the Highlands, do as the Highlanders do (no, you won't need a kilt, just a taste for single malt whisky).

The Batt family are reviving the Nant Estate, established in Bothwell in 1821, to its former prominence, and welcoming small numbers of guests to enjoy this uniquely Tasmanian experience. A visit here gives you a feel for local landscape and history, an appreciation for how well done contemporary additions can enhance heritage architecture (thanks to award-winning local firm Morris Nunn), and an advanced education in whisky, all in one charming location.

Wander past the mill pond, inhabited by a fat platypus or two, and take in the original flour mill now being painstakingly restored by 6th generation local Peter Bignell to grind hops for the distillery. Then get up close to the shimmering copper still while distiller Chris Condon explains the intricacies and investment required to produce a bottle of Nant Single Malt.

With a group of friends you can relax in the stylish Atrium, sample premium whiskeys with a specially designed platter of local gourmet goodies, and wait for the platypus and trout to rise in the mill pond. Combine it with a stay at The Islington and you'll feel like a true laird.
