In a basement on one of the main drags that runs through Hobart, you'll find a very funny set of characters debating matters spiritual - spirits from the liquor cabinet, that is. This is the base of Tasmania's distillery entrepreneur Bill Lark, maker of award-winning, locally distilled whiskies, and his cheery bar staff.

Lark is now indulging his penchant for experimentation with more exotic combinations, such as apple schnapps and the flavouring from the uniquely Tasmanian native pepperberry.

If you like your vodka or gin with a fragrance, you'll probably want to add the pepperberry version to your home bar. You can always claim it's just for medicinal purposes: the pepperberry liqueur is said to be the local preventative for colds and flu. Indeed, its slightly eucalyptus-y, lavender-y fragrance does makes you feel as if it's doing you good while the fuggy warmth radiates from the back of your throat.

Drop in for a tasting during the day, or come at night for the bar atmosphere and some live music.
